Chocolate Halwa Tart

Halwa is a traditional Indian dessert, made with semolina, butter (ideally ghee), milk, sugar and cardamom. You can make this dessert even more special, by adding some dark chocolate to it. It sets beautifully inside a tart case, making it the perfect option for a ‘fusion’ dessert.
Ingredients
1 baked tart case
For the chocolate halwa:
50g butter
70g Semolina
500ml whole milk
3-4 cardamom pods
75 -100g dark chocolate
Zest of 1 orange
To decorate:
Chantilly cream with cardamom and orange,
Coco powder to dust on top
Method
First add butter to a pan and let it brown. Then add cardamom and semolina, and fry till fragrant. Start adding milk, a little at a time. Keep whisking after each addition of milk till it becomes incorporated. The semolina will soak up the milk slowly.
Once all the milk is incorporated, add orange zest and chocolate pieces and whisk all the chocolate until it is melted into the halwa.
Pour the chocolate halwa in the tart case and let it cool.
Decorate with dusting of coco powder and some piping with Chantilly cream. Enjoy!
