Peanut Salted Caramel Sauce

Caramel is so versatile and enhances a great many different flavours. Nuts combine particularly well and this peanut caramel sauce will add some rich nuttiness to your baking.
Ingredients
200g caster sugar
100g double cream
100g smooth peanut butter
Pinch of salt
Method
In a medium saucepan, add the sugar with a splash of water and place on a medium heat. Let it caramelise and remember not to stir.
Once the liquid resembles light straw colour, give it a swirl.
When the caramel turns to light brown in colour, slowly pour over the warmed cream and whisk. It will splutter, so please be careful of hot sugar. Finally whisk in the salt and the peanut butter. If you want, you could also use crunchy peanut butter. This will provide a little extra texture to your finished caramel.
Pour the caramel into a heat proof bowl and let it cool slightly. Then cover with clingfilm, touching the top surface. Set aside until you need to use it.
