Walnut & Cardamom Rolls

This is one of my favourite types of bread – a delicious bread made with spice.


I like to think it these as a distant cousin of the cinnamon roll, but better – a bold claim! They have a filling of added walnuts and cardamom along with the usual cinnamon, butter and brown sugar.



Ingredients

 

For the dough 

500gm strong white bread flour

50gm sugar

10gm salt

10gm yeast

300gm milk

80gm unsalted butter

For the filling

70gm salted butter

70gm brown sugar 

75gm walnuts 

10 cardamom pods

1 tsp ground cinnamon 


150ml double cream (optional)


Method

 

 Mix all the ingredients for the dough and knead it to form a smooth dough. Then cover it and let it prove it for an hour in a warm place.

 

 Dry roast the walnuts and cardamom and grind them coarsely. Mix with the cinnamon and sugar. 

 

Roll the proven dough in a large rectangular shape (about 27cm x 30cm) and spread butter on top. Then sprinkle the filling mixture.

 

Now cut the dough into nine strips and roll each strip tightly to form the roll. Place in a lined baking tin, cover and let them prove for a further 30 mins.

 

Preheat the oven to 170o (Fan).

 

Before baking, pour some double cream on top then bake for 30-35mins, until baked.

 

Take the tray out of the oven and let it cool. Then top with your favourite cream cheese frosting. I normally just mix a small tub of cream cheese with 20g sugar and a tsp of vanilla for this frosting.
