Cake is the ultimate comfort food, a real symbol of happiness and indulgence. Naturally, I can’t take the credit for developing this classic recipe but I’m rather proud of the tweaks I’ve made to achieve the fluffiest of sponges with a nice flat top, the ideal for the good old Victoria Sponge.

Shortbread
This shortbread is simple to make, buttery, delicious and not overly sweet. It starts with the basic 1:2:3 ratio - 1part sugar, 2 parts butter and 3 parts flour. I personalise this recipe with added cardamom plus pinch of salt and it works beautifully.
